It is cold…and it is rainy…yep, fall is here. It also means that it is the perfect day to make some soup. I got a great (and easy) recipe from my friend Sarah and I thought today would be a perfect day to try it out.

First you need these ingredients:

Milk, cream of potato soup, southern style hash browns, bacon, green onions (optional) and cheese (optional)

In a saucepan, combine 2 cups milk, 2 cans of cream of potato soup and 2 cups of the hash browns. I also added in some black pepper and a little garlic for some added flavor. Head through (about 20 minutes). Next add in however much bacon you want. I bought the precooked bacon you can find in the salad aisle and put in two handfuls (sticking with the “2” theme).

Heat for another 10 minutes, and while the soup finishes, chop up some green onions for a garnish.

Once the soup is heated through, garnish with some cheese and green onions.
