Zucchini Cakes

Tonight I decided to try another new recipe.  This one comes from Life’s Ambrosia. The full recipe can be found HERE.

Ingredients you will need:

Large zucchini, 1 cup panko bread crumbs, 1/2 cup Parmesan, 1/4 tsp. paprika, minced garlic, pepper, salt, 1 egg, and 1 Tbsp. olive oil.

After grating the zucchini and using paper towels to get rid of the excess water, mix everything but the olive oil.

I started with one zucchini, but I added another half because it seemed like it needed a little more.

Then it’s time to shape the patties.  I used about 1/4 cup of the mix to make each of the patties.

Ready to cook!

Next, heat about a tablespoon of oil in a skillet over medium heat and cook the patties on each side for 3-4 minutes. I did mine in two batches – 4 in each batch.

Make sure the oil is hot before you start cooking.

This was a simple and delicious meal. I can’t wait to try this recipe again and try different combinations and spices.

I had a little bit of ranch dressing with mine, but it was good without anything!
