2014 New Recipe #3 – Baked Ground Turkey and Jack Chimichangas
As always, I’ve been trolling Pinterest looking for new recipe ideas (and trying to only pin ones that are somewhat healthy) and discovered this Baked Ground Turkey and Jack Chimichanga recipe. You can see the original post HERE but, as always, I made a few changes.
First, gather your ingredients:
- 1/2 lb ground turkey, uncooked
- 16 oz. canned fat-free refried beans
- 1 3/4 cup salsa
- 4.5 oz. canned mild green chili peppers, drained
- 1 tsp chili powder
- 3 tbsp. onions
- 1 3/4 cup monterey jack cheese
- 8 large burrito-size, wheat tortillas
Preheat oven to 350 F. Coat large skillet with cooking spray and coat a 9 x 13 inch baking dish with cooking spray.
Add turkey to skillet and cook over medium-high heat until lightly browned, about 5 minutes. Drain excess liquid from pan and then add beans, salsa, chili peppers, chili powder and onions. Cook until heated through (about 3 minutes); stir in cheese.
Assemble chimichangas by spooning about 1/2 cup of mixture onto each tortilla, add a sprinkle of cheese; fold sides and roll up.
Place chimichanga in prepared baking dish. Bake (uncovered) until tortillas are browned and crisp (about 20 minutes).
Serve each topped with some salsa and sour cream.
This recipe was super simple and you could easily change up what you use for your meat (or go meatless). I think next time I might try some rotisserie chicken, since I usually have that in my refrigerator. Is it as good as a nice, deep-fried chimichanga from your local Mexican restaurant, no, but it’s a good substitute when you are trying to stay a little healthier!
