Cilantro Lime Shrimp and Avocado salad
There are some recipes that you just crave…for me, this Cilantro Lime Shrimp and Avocado salad is one that I will start craving out of nowhere. Although this is definitely a perfect summer salad, when fresh veggies are everywhere, I couldn’t help but make it tonight because it just sounded so go.
The recipe is super simple, and the result is a light and fresh salad that is a perfect lunch or light supper.
You will need the following ingredients for a single serving:
- 10-15 shrimp
- 2 roma tomatoes (or tomatoes of your choice), seeded
- Red onion (I usually do about a tablespoon
- 1/4 an avocado
- 1/4 jalapeno, seeded
- 1/2 lime, squeezed
- 1 small bunch of cilantro
- pinch of salt
First, thaw out your shrimp (if using cooked, frozen…which is the easiest), and take off the tails.
Next, chop all of the ingredients (except the lime) and put into a bowl.
Now, squeeze the lime over the salad…and add a pinch of salt (I often omit the salt – it doesn’t always need it)
Mix up all ingredients and enjoy….oh so good and so fresh!! YUM!!!
This recipe is easily altered if you want to make 4 servings, 2 servings…
